Don Jesus Hernan Ledezma, hailing from Cauca, grew up amidst coffee-growing traditions. At just 20, he ventured to Huila to work as a coffee picker. Years of toil afforded him the opportunity to acquire land in Iquira, Huila, which he named La Escuelita. Married to Mrs. Eveleida, also from Cauca, they nurture their six children together.
Coffee processing at La Escuelita follows the traditional washed method, adapting each step to the prevailing climate. Cherries undergo initial fermentation in the wet mill's hopper for 12 to 16 hours, then de-pulped and subjected to a dry fermentation lasting 24 to 30 hours. The parchment undergoes washing and drying for 8 to 15 days.
